Beef Shin Carbonnade
Based on a Belgian classic that is incredibly easy to make with a simple, rich and honest sauce that partners beautifully with our tender Red Ruby beef.
BEEF SHIN CARBONNADE
1 Cook 100g diced bacon in oil and butter then when golden, add 3 sliced onions and simmer approx 30 mins until onions are golden
2 Add a kilo of diced shin with a tablespoon of flour and cook for 5 minutes
3 Add 4 cloves chopped garlic, 30g brown sugar, 25ml red wine vinegar, a tablespoon wholegrain mustard and 750ml dark ale
4 Cover and cook in a low oven for 3 hours
Serve this delicious heartwarming casserole, serve with mashed potato and greens
